The pyramids are Giza; this day is Cairo itself. It pairs with the pyramids day for a two-day visit, or stands alone for guests who have already seen the plateau.
The Egyptian Museum on Tahrir Square opened in 1902 and still holds 120,000 objects: the Narmer Palette, the Old Kingdom statues of Rahotep and Nofret, the Amarna gallery of Akhenaten and Nefertiti. Two hours with your guide cover the masterpieces on both floors. (Tutankhamun's treasures moved to the Grand Egyptian Museum; the royal mummies to the NMEC.)
The Citadel of Saladin (1176) stands on the Muqattam spur above the city. Inside, the Muhammad Ali Mosque with its alabaster courtyard and Ottoman domes (1830 to 1848) and a terrace view over Islamic Cairo to the pyramids on a clear day. Lunch follows at a restaurant in the old city.
Coptic Cairo sits inside the walls of the Roman fortress of Babylon: the Hanging Church built over the fortress gate, the crypt of St Sergius where the Holy Family is said to have sheltered, and the Ben Ezra Synagogue. The day ends at Khan El Khalili, the bazaar founded in 1382: spices, lanterns, copper, silver, and a mint tea at El Fishawy, open since 1773.
Red Sea guests: coach 02:00–03:30 or flight pickup 04:30; arrival in Cairo about 09:00.

I highly discourage using this operator. Beware of them! Our experience with them was very bad. We paid €150 (for 3 people) for a tour with a licensed, professional guide as clearly stated in our reservation. Instead, we were assigned a young boy who spoke very little Italian and had zero experience and above all zero knowledge…
Our guide was helpful and knowledgeable and made the tours very pleasant. The sites were interesting.
La experiencia fue cómoda, nos llevaron. Y explicaron muchas cosas de la cultura e historia y nos llevaron a diferentes lugares, Rana fue muy amable, el recorrido incluía un almuerzo muy bueno, El tour era por varios lugares y fue algo rápido pero en general bien.
Excelente experiencia: el guía en español es muy amable y te hace sentir cómodo en el recorrido, hizo el recorrido por Egipto claro, ameno y muy bien organizado. Totalmente recomendable.
